Yum, yum!<\/p>\n<p><img decoding=\"async\" align=\"middle\" src=\"https:\/\/blog.ernstrom.net\/wp-content\/uploads\/2008\/07.26_ChickenRolls.png\" \/><\/p>\n<p>Sandra recently posted a recipe for some yummy <a target=\"_blank\" href=\"http:\/\/westwoodsrock.blogspot.com\/2008\/07\/food-frenzy-friday.html\">rolls<\/a> on her blog. Some old friends were coming over for lunch, so I thought I&#8217;d make some up. We made Chicken Salad Sandwiches out of them, using the chicken salad recipe from <a target=\"_blank\" href=\"http:\/\/thepioneerwoman.com\/cooking\/2008\/05\/chicken-salad-the-way-i-like-it\/\">Pioneer Woman<\/a>. The result was awesomely delicious!<\/p>\n<p>I highly recommend that everyone make both of these items! They are both relatively easy too.<\/p>\n<p>I am going to repost both recipes here for ease in finding them, but I also linked to both above, if you want to check out their websites &#8211; and the pictures of their food items.<\/p>\n<blockquote><p><strong>Sandra&#8217;s Rolls<\/strong><\/p>\n<p><em>1 c. hot water<br \/>\n1\/2 c. melted margarine<br \/>\n3\/8 c. sugar<\/em><\/p>\n<p>Combine well the above ingredients.<br \/>\nAdd&#8230;<\/p>\n<p><em>1 T. yeast<\/em><\/p>\n<p>Let sit for 5 minutes.<br \/>\nAdd&#8230;<\/p>\n<p><em>1 egg<br \/>\n1 1\/2 c. flour<br \/>\n1\/2 t. salt<br \/>\n1\/2 t. baking powder<\/em><\/p>\n<p>Stir well, removing any lumps. Batter will be runny.<br \/>\nAdd&#8230;<\/p>\n<p><em>2 c. flour<\/em><\/p>\n<p>Mix well. Cover, and let rise for 1 hour.<br \/>\nRoll out onto floured surface, about 1\/4&#8243; thick. Use pizza cutter to cut unto triangles (like you would cut a pizza).<br \/>\nRoll into crescent shapes.<br \/>\nPlace on lightly greased cookie sheet. Cover and let rise an additional 60-90 minutes.<br \/>\nCook at 400 degrees for 10-12 minutes.<\/p><\/blockquote>\n<p>Please note, Sandra&#8217;s recipe doesn&#8217;t mention needing to let the rolls raise a second time. I just tried that hoping the insides would be thinner\/fluffier for stuffing with Chicken Salad. It worked, I liked the results. So, when making them &#8211; let them raise a second time, or not.<\/p>\n<blockquote><p><strong>PW&#8217;s Chicken Salad<\/strong><\/p>\n<p><em>1 whole chicken fryer<br \/>\n3-4 stalks of celery<br \/>\nBunch of red grapes (green works too)<br \/>\n3-4 green onions<\/em><\/p>\n<p><em>1\/2 c. mayonnaise (not miracle whip)<br \/>\n1\/2 c. sour cream<br \/>\n1 T. lemon juice<br \/>\n1 T. brown sugar<br \/>\nSalt and Pepper to taste<br \/>\nDill Weed to taste<br \/>\n<\/em><\/p>\n<p>Cook Chicken. Remove from the bones, and cube or shred into bite-sized pieces.<br \/>\nCut celery into small pieces<br \/>\nChop green onions (both white and green parts)<br \/>\nCut red grapes in half lengthwise<\/p>\n<p>Combine prepared chicken, celery, onions, and grapes in a bowl.<\/p>\n<p>Combine mayo, sour cream, lemon juice, and brown sugar in a seperate bowl. Mix well.<br \/>\nGenerously sprinkle with Salt, Pepper, and Dill Weed &#8211; as desired.<br \/>\nStir again.<\/p>\n<p>Add sauce to the bowl with chicken ingredients. Stir to coat.<\/p>\n<p>Serve immediately, or refrigerate.<\/p><\/blockquote>\n<p>Note: Pioneer Woman likes to eat hers on toasted wheat bread with mustard and spinach leaves. Look at her site for details.
