And I love them.<\/p>\n<p>They are fast, easy, and an excellent way to use up overripe bananas. I prefer them with nuts (chopped pecans), but they are good without nuts too.<\/p>\n<p><img decoding=\"async\" align=\"middle\" src=\"https:\/\/blog.ernstrom.net\/wp-content\/uploads\/2008\/02.02_muffins.png\" \/><\/p>\n<blockquote><p><strong>Banana Nut Muffins<\/strong><\/p>\n<p>1 cup flour<br \/>\n1\/2 cup sugar<br \/>\n2 1\/2 t. baking powder<br \/>\n1\/2 t. salt<br \/>\n1\/4 t. baking soda<br \/>\n3\/4 cup oats<br \/>\n1 egg, beaten<br \/>\n3 T. melted margarine<br \/>\n1\/2 cup milk<br \/>\n1\/2 cup mashed ripe banana<br \/>\n1\/3 cup chopped nuts (walnuts or pecans) &#8211; optional<\/p>\n<p>Mix together flour, sugar, baking powder, salt, and baking soda. Stir in oats.<\/p>\n<p>Add beaten egg, margarine, milk, bananas and nuts. Stir only until dry ingredients are moistened.<\/p>\n<p>Fill lined muffin cups 2\/3 full. Bake at 400 degrees for approx. 20 minutes.<\/p>\n<p>Yield: 1 dozen.<\/p><\/blockquote>\n<p>They are good just as they are, even when they&#8217;re cold. But they are fabulous warmed with butter.
