It turned out really good &#8211; so I thought I&#8217;d share.<\/p>\n<p><img decoding=\"async\" align=\"middle\" src=\"https:\/\/blog.ernstrom.net\/wp-content\/uploads\/2008\/02.28_SpinachDip.png\" \/><\/p>\n<blockquote><p>1\/2 onion finely chopped<br \/>\n1 stick butter<br \/>\n1 pkg. frozen spinach, thawed<br \/>\n8 oz. Philly cream cheese<br \/>\n8 oz. sour cream<br \/>\n3\/4 c. shredded Parmesan cheese<br \/>\n1 jar marinated artichokes, chopped<br \/>\nred pepper flakes to taste<br \/>\n8 oz. shredded Monterey Jack cheese<br \/>\n1 Roma tomato, diced<br \/>\n1 green onion, chopped.<br \/>\nSaut\u00e9 onions in butter. Add ingredients while mixing and blend well after each addition.<\/p>\n<p>Add ingredients in this order: Spinach, Cream Cheese, Sour Cream, Parmesan Cheese, Artichoke Hearts, Crushed Red Pepper Flakes.  Remove from heat and put in crocks or microwave dish.<\/p>\n<p>Pour mixture onto a plate or platter. Top with Monterey Jack Cheese, tomatoes and green onion. Melt.<\/p>\n<p>Serve hot with chips or bread.<\/p><\/blockquote>\n<p>It makes a lot. Probably enough for two platters (depending on the size). You can freeze the dip pretty easily though. Just top with fresh cheese\/tomatoes\/onions after defrosting and reheating.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I recently tried a really yummy spinach-artichoke dip.
